Pistachios used to come mainly from Iran, where they originated. The red was to hide blemishes that made the nuts look unappealing. When California’s pistachio industry took off we improved harvesting and processing, eliminating blemishes and producing the beautiful nuts we enjoy today. Like these my client gave me this morning.
I can’t take pictures in the plant due to proprietary equipment, but here are a few photos from the trip.

I do remember red pistachios! When they started showing up without the red dye it seemed weird but now it would seem weird for them to have it.

You know, I always considered pistachios red, but figured the "all natural" culture had just pushed them away. I had no idea it was about blemishes or Iran. TIL a lot about one of my favorite foods.

My sisters would lick the shells and wipe the red stuff on their lips like lipstick. It was some sort of super-soft food-grade wax or something, right?

Nah, like everything else we try, American pistachios are the best.

I don't remember red pistachios, but all the California pistachios I eat look all fucked up. I don't care because they're delicious.

I LOVE pistachios. And I don’t have them nearly often enough.
